Simple steps to make salt and pepper chicken
For the first step, clean the chicken thoroughly and marinate it with yogurt, salt, half of the crushed lemon juice, and half of the ginger-garlic paste.
Mix well all the chicken pieces with the marinade and let it rest for at least half an hour.
Heat oil in a wok over medium-high flame and add the sliced onions to it.
Cook until it starts changing its color, then add the remaining ginger-garlic paste and sauté until nicely cooked and golden brown in color.
Now,, add the remaining black pepper, garam masala, coriander powder, cumin powder, and crushed fennel seeds, and stir to mix well. So, that’s all the dry spices; be careful not to burn them.
For this, immediately add the tomato puree and let it cook until leaving the oil.
You can add a little water over here if it sticks at the bottom. Once the tomato is cooked enough and the marinated chicken, stir to mix everything well. Make sure that the chicken pieces are coated with the masala.
When the chicken starts changing its color, add half to one cup of water as desired and then cover it with a lid and let it cook on medium-high heat for around 10 to 12 minutes, until the chicken is tender and cooked through.
Now, remove the lid and do a taste check, adding some more curry leaves, and keep it on low flame for another 5 to 8 minutes.
This chicken will get a nice coating of all the masala and it will turn a little darker in color. Now it’s ready. Serve it hot with some fresh coriander on top. Spicy Pepper Chicken is ready, and it’s a little on the darker side.

Is Salt and Pepper Chicken healthy or gluten-free?
Salt and pepper chicken can be healthy if you cook it by baking or grilling instead of frying. But remember, how healthy it is depends on how much you eat and what ingredients you use for seasoning.
As for gluten, traditional salt and pepper chicken recipes usually don’t have gluten because they use cornstarch for coating before frying. But if you buy it ready-made or eat out, it’s smart to check with the place to make sure there’s no gluten in the seasoning or how it’s prepared.
